Angel Hair with Garlic & Chilis


This recipe is so easy it's barely a recipe at all!  It makes a delicious, quick lunch or dinner.

I love angel hair pasta. The super thin strands are great with this simple sauce.  Here's what you need.  




2 tablespoons olive oil
2 large garlic cloves
1 teaspoon red chili flakes
1/2 pound angel hair pasta or capellini
a handful of fresh parsley
grated parmesan cheese



Cook the pasta in boiling salted water.  It should only take a couple of minutes.  Reserve a cup of the pasta water before you drain the pasta.



Meanwhile, while the pasta cooks, heat the oil in a large pan over medium heat.  Slice the garlic and add it to the pan.  



Cook for about 2 minutes until the garlic is softened but not browned.  Then add the chili flakes and the pasta water.  Bring it to a simmer, then add the pasta and toss it with the garlic mixture to coat the noodles.



Chop the parsley and sprinkle over the pasta.  Serve in bowls with parmesan shaved over top.  



This takes about 10 minutes to throw together and it's very satisfying.
