Ground turkey doesn't really work the same as beef. Since it is so lean, it can turn out dry. But this recipe uses veggies to keep the meat moist, juicy and flavourful. These burgers are delicious and very healthy too!
Here's what you need for these burgers.
3/4 pound ground turkey
1 small zucchini
1/2 small onion
2 garlic cloves
1/2 tablespoon Italian seasoning
1/2 tablespoon salt
1/2 tablespoon pepper
The carrot and zucchini need to be grated. You can do it by hand if you like but a food processor is much easier. You can throw the onion and garlic in there too, or finely mince them by hand.
Combine the ground turkey, grated veggies, spices and egg in a bowl.
The next part gets messy. You need to mix it all together very thoroughly. With beef you want to mix as little as possible to keep it tender but that's not an issue with ground turkey.
Once it's mixed, take 1/4 of the mixture and shape it into a patty. The mixture will be wet but it'll firm up on the grill.
Make 4 patties and refrigerate them while you warm up the grill.
Heat the grill to medium and make sure it is well oiled so they don't stick. Let them sit, undisturbed for 5 minutes before flipping them over.
Grill on the other side until thoroughly cooked, about 5 minutes more.
The patties don't shrink as much as a beef patty would because they have so little fat!
Serve the burgers on a whole grain bun for a very healthy meal. You can top it with traditional burger toppings like ketchup, mustard, mayo, lettuce, etc. Or you can add sautéed mushrooms and onions, cheese, avocado... the options are endless.
And if you really want to make it healthy, you can use a lettuce wrap instead of a bun, with the toppings of your choice.
