Gnocchi with Broccoli
Gnocchi. Why didn't I make these sooner? These little potato dumplings make a hearty main dish or an interesting but simple side dish.
I fully intend to use my potato ricer to make home made gnocchi in the future, but for now I can pick up a package ready-made at the grocery store and have a meal in minutes.
Here's what you need for this tasty meal:
2 strips bacon
1 500g package gnocchi
2 cups broccoli florets
1 small onion, sliced
1 garlic clove, minced
1 cup sliced mushrooms
1/2 cup white wine
3-4 fresh sage leaves, minced
toasted pine nuts
grated parmesan or romano cheese
In a large pot of boiling, salted water, cook the gnocchi according to package directions. In the last minute, add the broccoli. Then drain and keep warm.
Meanwhile, dice the bacon and cook it over medium heat until crisp. Remove the bacon from the pan and set aside.
Add a little butter to the bacon fat in the pan and then add the sliced mushrooms and onions. Cook for about 8 minutes until mushrooms are browned. Then add the minced garlic clove and cook about a minute more. Add the minced sage leaves and wine to the pan, then add the gnocchi, broccoli and bacon.
Serve the gnocchi on its own or alongside roast chicken or grilled pork.
Top with pine nuts and grated cheese. Delicious!
