Last Sunday my husband surprised me by making me some massive T-bone steaks, baked potatoes and fresh, local asparagus for dinner. The steaks were delicious but obviously way more than the two of us could finish.
I love leftover steak. Honestly, eating it sliced thin, cold from the fridge is a real treat for me. But we wanted to make a meal out of these leftovers so we made this "kitchen sink" salad with a bunch of greens and veggies from the fridge. This is a great summer meal because you don't have to turn on the oven or even a burner - you can warm everything up on the grill.
I tossed some lettuce and spinach with some sliced cucumbers, carrots, radishes and some crumbled feta cheese. You can use any greens and veggies you have in the crisper.
Meanwhile, Matt grilled up some sweet vidalia onion slices, asparagus and red peppers drizzled with olive oil. He also slowly heated the leftover steak over a low grill, as well as some leftover baguette from the freezer.
I sliced up the grilled veggies and tossed them with the salad greens and dressing. I used a lemon vinaigrette which was nice. Balsamic vinaigrette would also be great.
Then, we sliced the warm steak very thin and laid the slices on top of the salad. The steak wasn't hot, just warm on the outside and still cool in the middle. You can heat it through but it risks getting the steak more well done than you may want.
